So…the day has come where I make my own Yorkshire puddings…oh
dear god…send help!
Just with short crust pastry, I have always relied on my
mother to make the Yorkshires from scratch because she seems to make them just
amazingly well and perfect in every way.
And yes I could buy them but where is the fun in that?!?! Lol!

Anyway on a more serious note, with my other half asking for
Toad in the Hole, I thought today was a perfect opportunity to try out a simple
Yorkshire recipe and write up another one of my favourites for the blog for you
lovely people to enjoy :)
Note: I make large portions of whatever I make as the
leftovers are great for lunch the next day, I also tend to serve toad in the
hole with mash potatoes.
Things you will need:

A pack of 6-8 good quality sausages (it makes a
big difference!)

A little sunflower oil

4 ounces (113g) of plain flour

2 eggs
-
250ml of milk
-
Salt, pepper and mixed herbs
Step 1: In a mixing bowl, pour in your flour and eggs, use a
wooden spoon or whisk to mix together, one combined, slowly start add the milk
a few tablespoons at a time, pause each time to fully incorporate the milk,
this prevents any lumps in your final mixture, keep going until all the milk is
combined, at this stage you can season with salt, pepper and mixed herbs if you
like, set to one side for later use.
Note: the mixture should be quite a runny consistency, think
pancake mix!
Step 2: Pre heat your oven to 170 degrees Celsius.
Step 3: Heat up some oil in a pan on medium heat and top in
all of your sausages, cook gently, turning occasionally until the sausages have
a nice brown colour and are partially cooked through, bear in mind that they
will be going into the oven for a while so it doesn’t matter if they aren’t fully
cooked, turn off the heat and set to one side.
Step 4: In your dish, pour in enough oil to coat the bottom
and place into your oven for a good 10 minutes to heat it up, keep a close eye
on it as it is oil after all!
Step 5: Remove the dish of hot oil from the oven, very
carefully place your sausages into this dish, and make sure to be gentle to
avoid being burnt by the oil.
Step 6: After arranging your sausages in the dish, carefully
pour over your Yorkshire pudding mix and put back into the oven.
Step 7: cook for approximately 30-45 minutes, or until the Yorkshire
pudding mixture has risen and has a nice golden colour on top.
Note: Do not open the oven once the mixture has gone in! In
the same way a cake does, if you open the oven door while cooking, your Yorkshires
will sink and become very dense!
Step 8: Once fully cooked, remove from the oven and leave it
standing for a few minutes, cut into portions and serve with whatever side dish
you like (I recommend mash potato!) and a big jug of gravy.
And there you go! Yorkshire puddings are actually pretty
easy to do, you only have to be careful to not open the door when it’s in the
oven or you will end up with a dense dough like mixture that isn’t exactly
appealing!
